Round Roasts (Top, Eye or Bottom)

Come from the upper leg of the cow and are named by the part of they are from. These are lean cuts and can be tough if not cooked correctly. Round roasts cooked by slow moist-heat methods including braising, will tenderize the meat and maintain moisture. The flavor is very buttery when cooked correctly.
