A flank steak is a top sirloin steak and is wonderfully juicy and flavorful cut well. American butchers call a thick top sirloin steak a Chateaubriand.

London Broil Steak (Walker Farm At Whortleberry Hill)

A true 'London Broil' is a cut called a flank. The steaks from supermarkets are usually from the chuck. It is cut thin by hand on a bias so it is tender – if cut incorrectly by the butcher, it can be very tough – cut and cooked correctly it is one of our favorites.
