We make our burger from many of the cuts you DON’T see listed elsewhere – we don’t carry minute steaks, etc – we use the cuts that wouldn’t make a tender and flavorful steak or roast in our burger and sausage so it’s much richer than regular burger and melt-in-your-mouth tender. Don’t incinerate it and you’ll find it’s the best burger you’ve ever had!

SUET (Walker Farm At Whortleberry Hill)

Suet is raw beef fat, especially the hard fat found around the loins and kidneys. Suet has a melting point of between 45 °C and 50 °C (113 °F and 122 °F) and is congealed at room temperature. Its high smoke point makes it ideal for deep frying and pastry production. It is also used in soaps and many products. We make our own tallow from it - it's wicked easy. Tallow is a rendered form of beef fat, processed from suet - you can do it in the crock pot - I can tell you how. It is solid at room temperature. Unlike suet, tallow can be stored for extended periods without the need for refrigeration to prevent decomposition, provided it is kept in an airtight container to prevent oxidation. It's used in Native American Pemmican and often for deep frying - remember the ORIGINAL McDonalds fries that were so yummy? They were fried in TALLOW. We use it ourselves and have a number of customers that order it so if you'd like it make sure to get on the list.
