Shoulder Roast (Walker Farm At Whortleberry Hill)

The traditional Pot Roast Cuts – because of the lower fat content, this is best slow cooked or roasted – but it’s grass fed so it will still have plenty of fat, DO NOT overcook it.

CHUCK Roast (Walker Farm At Whortleberry Hill)

The typical chuck STEAK is a rectangular cut, about 1" thick and containing parts of the shoulder bones, and is often known as a "7-bone steak". (This is in reference to the shape of the bone, which resembles the numeral '7', not to the number of bones in the cut.) This cut is usually grilled or broiled; THIS IS the thicker version is sold as a "7-Bone Roast" or "chuck roast" and is usually cooked with liquid as a pot roast. Braise it on high and cook it low, DO NOT overcook it.

CHUCK Steak (Walker Farm At Whortleberry Hill)

The Chuck is the front of the beef - where the flavor starts - truly, this is one of THE MOST flavorful pieces of meat on the beef. The typical chuck steak is a rectangular cut, about 1" thick and containing parts of the shoulder bones, and is often known as a "7-bone steak". (This is in reference to the shape of the bone, which resembles the numeral '7', not to the number of bones in the cut.) This cut is usually grilled or broiled; a thicker version is sold as a "7-Bone Roast" or "chuck roast" and is usually cooked with liquid as a pot roast. This steak is so well marbled it's amazing and is one of our family's favorites. It is big enough to feed a family - we always have left overs also - it's enormous and delicious - one of our better values for the quality and quantity (and fatty goodness!) Braise it on high and cook it low, DO NOT overcook it.
