Round Roasts (Top, Eye or Bottom) (Walker Farm At Whortleberry Hill)

Come from the upper leg of the cow and are named by the part of they are from. These are lean cuts and can be tough if not cooked correctly. Round roasts cooked by slow moist-heat methods including braising, will tenderize the meat and maintain moisture. The flavor is very buttery when cooked correctly.

A hanger steak is a cut of beef steak prized for its flavor. It typically weighs about 1.0 to 1.5 lb. In the past, it was sometimes known as "butcher's steak" because butchers would often keep it for themselves rather than offer it for sale – and often so do we!

A true 'London Broil' is a cut called a flank. The steaks from supermarkets are usually from the chuck. It is cut thin by hand on a bias so it is tender – if cut incorrectly by the butcher, it can be very tough – cut and cooked correctly it is one of our favorites.

(This is in reference to the shape of the bone, which resembles the numeral '7', not to the number of bones in the cut.) This cut is usually grilled or broiled; THIS IS the thicker version is sold as a "7-Bone Roast" or "chuck roast" and is usually cooked with liquid as a pot roast. Braise it on high and cook it low, DO NOT overcook it.

CHUCK Steak (Walker Farm At Whortleberry Hill)

The Chuck is the front of the beef - where the flavor starts - truly, this is one of THE MOST flavorful pieces of meat on the beef. The typical chuck steak is a rectangular cut, about 1" thick and containing parts of the shoulder bones, and is often known as a "7-bone steak". (This is in reference to the shape of the bone, which resembles the numeral '7', not to the number of bones in the cut.) This cut is usually grilled or broiled; a thicker version is sold as a "7-Bone Roast" or "chuck roast" and is usually cooked with liquid as a pot roast. This steak is so well marbled it's amazing and is one of our family's favorites. It is big enough to feed a family - we always have left overs also - it's enormous and delicious - one of our better values for the quality and quantity (and fatty goodness!) Braise it on high and cook it low, DO NOT overcook it.

SUET (Walker Farm At Whortleberry Hill)

Suet is raw beef fat, especially the hard fat found around the loins and kidneys. Suet has a melting point of between 45 °C and 50 °C (113 °F and 122 °F) and is congealed at room temperature. Its high smoke point makes it ideal for deep frying and pastry production. It is also used in soaps and many products. We make our own tallow from it - it's wicked easy. Tallow is a rendered form of beef fat, processed from suet - you can do it in the crock pot - I can tell you how. It is solid at room temperature. Unlike suet, tallow can be stored for extended periods without the need for refrigeration to prevent decomposition, provided it is kept in an airtight container to prevent oxidation. It's used in Native American Pemmican and often for deep frying - remember the ORIGINAL McDonalds fries that were so yummy? They were fried in TALLOW. We use it ourselves and have a number of customers that order it so if you'd like it make sure to get on the list.
